When it’s cold outside, you can’t beat a good batch of homemade soup! As many of you know I’m not one for cooking but over the past couple of months I’ve become increasingly interested in cooking and baking at home, along with the kids!
I was talking with a couple of my friends, who have young children, and they mentioned how easy it was to make soup. My first thoughts were, “No I can’t do that! It’s really complicated and far too messy” However they assured me it was very easy to do, and great to encourage the kids to eat one of their 5 a day!
I flicked through a couple of kid’s recipe books that I found in the kitchen cupboard and thought about making either Leek & Potato Soup or Tomato & Basil, as these two seemed the easiest! I asked the kids which they’d prefer and of course they said Tomato & Basil, so that’s what we went ahead with!
Below is my step by step guide to making Cream Of Tomato & Basil Soup!
Ingredients….
2 (400g) tins chopped tomatoes
400ml chicken or vegetable stock
1 tablespoon sugar
18 leaves fresh basil
2 tablespoons butter
250ml whipping or double cream
Method:
- Simmer the tomatoes and stock for 10 minutes.
- Add sugar and basil and cook for a further 5 minutes. Add more sugar if required.
- Stir in the cream and butter until the butter has melted.
- Blend slightly (not essential)
- Season to taste.
- Serve and enjoy!!!
It was delicious and the kids even asked for more!
